*Nathan and I celebrated our first anniversary. It was a wonderful first year of marriage. Far greater than I could have imagined.
*My little brother came home safely from Afghanistan. The Lord clearly watched over him and we could have easily lost him. He is likely to return in July, an idea which my big sister heart can hardly take, but the Lord is faithful and just.
*I finished all of the classes for my license. If I successfully pass my upcoming internship for teaching, I will earn my license with a 4.0. In light of my health issues, that's basically a miracle.
*I had a long term sub job at my favorite school. I got to be there for 9 weeks, made great friends, and was invited to do the elementary school portion of my student teaching there. I am very grateful!
*We celebrated a fun and busy Christmas! 10 Christmas celebrations and parties in all. It was so much fun to celebrate Christmas in our new home.
The Lord greatly blessed us in 2010. We are very aware of His kindness to us. Some things I am looking forward to in 2011:
*One of my best friends is getting married! I am incredibly proud of her and her fiance and the way their relationship has glorified God. They have waited for their day, and it will be absolutely beautiful. I cannot express the joy I feel when I think about standing next to her on her day!
*Finishing my ESOL teaching license and Lord willing, getting a teaching job. I will have 3 classes yet to get my Master's, but after 6 years of higher education, I am going to take a year off from school. Huzzah!
*We have a Poe baby due in February and my sister is having a little girl in April. I can't wait to meet these little ones!
*We are going on a missions trip to Haiti with our dear friends Jewel and Jason Peach and a few others from our church. Nathan and I have wanted to go on a missions trip together since we started dating and we are eager to go to Haiti and serve. Prayers for the planning of this trip are coveted!
*Our 2nd anniversary. I adore my husband. You're probably sick of hearing it, but I can't say it enough :)
Today we are spending a quiet day at home and I am busy in the kitchen. Tonight's dinner is homemade chicken noodle soup. I use my dad's recipe and just substitute gluten free noodles. I like to put broccoli, potatoes, and carrots in ours. Right now my gluten free granola is in the oven. I am particularly fond of this recipe. It is the result of bits and pieces of other recipes and a few experiment batches. For me, it has a great sweet and nutty taste and is a nice alternative to Corn Flakes and Rice Chex. To end today, I would like to share it with you:
4 cups of oats (I use Bob's Red Mill's Gluten Free Old Fashioned Rolled Oats)
1/2 cup of walnuts
1/4 cup of sunflower seeds
1/4 cup of brown sugar
2 tsp. of cinnamon
1 tsp. of salt (I use Kosher)
1 tsp. of vanilla
1/3 cup of olive oil
1/3 cup of honey (I use agave nectar because it has a lower glycemic index than honey)
1/2 cup of peanut butter
1 cup dried cranberries
*Preheat the oven to 325 and lightly grease a large baking sheet
*Mix first six ingredients together until thoroughly combined. Then add the vanilla, olive oil, honey, and peanut butter. Stir until the peanut butter is evenly mixed in.
*Spread the mixture on the lightly greased baking sheet and bake for 30 minutes.
*Let the mixture cool before adding in the cranberries. Store in a tightly sealed container.
